The old castle, situated at the heart of the vineyard of Château Cabrières, has an impressively long history. Indeed, in the interior the door of an oven has been discovered whose chipped stone appearance points to techniques once used back in the 14th and 15th centuries. This proves the historic nature of the Château and also of its vineyards, which benefit from the flinty nature of the local soil. Vines have been planted since 1344. The Château has belonged to the Arnaud family for many many years, during which time they have devoted their lives to the quality and the character of the wines and traditions of Châteauneuf-du-Pape.
The average yield is about 25 to 30 hl/hectare. During the harvest the mandatory selection of the grapes is done twice by hand. Our Châteauneuf-du-Pape red is produced traditionally. The freshly picked grape juice is steeped on its skins for approximately three weeks in order to integrate the necessary tannins and maximise the fragrance prior to ageing. The different grape varieties are then blended to obtain the best possible balance. Château Cabrières reds have a beautiful, rich ruby colour with a full intense bouquet. Their fragrance is typical of classic Châteauneuf, reflecting the heady aromatic scents of the combination of grapes and soil. The wine is then matured in French oak barrels for twelve months before being bottled.
The “Cuvée Prestige” is fashioned from the oldest vines of the permitted 13 grape varieties, to be found at the rear of the Château and which were planted 120 years ago in 1900. The low average yield of these ancient vines (only 12 hl/hectare) provides the powerful aromas and richness of fruit in order to produce a rare cuvée of exceptional quality.... the wines of Château Cabrières are amongst the greatest of the Châteauneuf-du-Pape appellation having been awarded many gold/silver medals and recommendations from well-known international wine critics.
