VINIFICATION AND AGEING- Early traditional harvest period starting from the first ten days of August, early in the morning.
Soft pressing and fermentation at controlled temperature. Ageing in the cellar at controlled temperature and then 2 months in bottle.
TASTING NOTES Colour: light straw yellow. Bouquet: elegant and floral with pleasant scents of jasmine and orange blossoms, blended with fresh aromas of lemon and mint. Flavour: fresh, well balanced and citrusy, with hints of grapefruit and wild fennel.
Since 1880 Pellegrino have cultivated the best Sicilian grapes, representing today a reality of great tradition and experience on the island. In over 135 years they have acquired a deep knowledge of our territory, of the methods of cultivation of native vines, of the best winemaking techniques of grapes.
They grow their grapes in four estates owned with specific vocations, all managed with organic cultivation methods in full respect of the environment. Kelbi, lush garden, ideal for the cultivation of catarratto. Rough, harsh and desert, where syrah grows vigorously. Salinaro, whose cricket vineyards on the coast enjoy the cool sea breezes. Gazzerotta, windy plateau, ideal for the cultivation of Nero d'Avola and where an ancient vineyard of cricket has put down deep roots, expressing the highest quality levels.
