The Judean Hills lies within the Samson region in Israel, these hills (more like mountains) sit up to 1000m above sea level. It is the altitude here that allows vines to grow as otherwise the semi-desert below is far to hot to grow successful vines.
This particular region has a great diurnal range which extends the ripening periods of the grapes through having warm days and cool nights, allowing the grapes to retain the phenolics and acidity needed for winemaking.
Classic grapes grown are Cabernet, Merlot, Petit Verdot, Sauvignon, Gewürztraminer and Chardonnay.
