The unusual horizontal fermentation tanks ensure that the wines benefit from extra lees contact during maturation thereby adding to the complexity and richness of the finished wines. Jean-François prefers a cool fermentation to retain the intrinsic fruit character of his various cuvées whilst also allowing his wines to mature for 3-5 months on their lees. This maximises the wines’ ripe textural style that acts as a counterpoint to the wines’ archetypal fresh minerality

The Seguinot family’s roots in Maligny (the front door of Chablis) can be traced as far back as 1590. Resting on the sloping right bank of the Serein River, 16ha lie on a perfect south/south-east exposition.
Rich soils from the Kimmeridgian maritime origin gives Seguinot-Bordets Chablis a unique ‘iodine’ character, genuine and inimitable typicity.

The wines are carefully made in a well-equipped modern winery, with vinification in stainless steel vats to preserve freshness. The unusual horizontal fermentation tanks give the wines more lees contact during maturation adding to the complexity and richness of the wines. Jean-Francois places particular emphasis on obtaining the best fruit possible, through careful pruning, debudding and harvesting. J.F Bordet practices coolish fermentation and allows his wines to mature for

3-5 months on their lees; this maximised the contact and promote a luscious style to the wines.
